Ingredients

For the Ranchero Sauce

  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced

  • 1 can diced tomatoes — 14 oz (400 g)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

For the Huevos Rancheros

  • 8 corn tortillas
  • 1 tablespoon vegetable oil
  • 8 large eggs
  • 1 can refried beans — 16 oz (450 g)
  • 1 avocado, sliced
  • 1/2 cup crumbled queso fresco or feta cheese — about 2 oz (60 g)
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

Step 1: Make the Ranchero Sauce

Heat olive oil in a skillet over medium heat. Add diced onion and cook for 4–5 minutes until softened. Stir in garlic and jalapeño and cook for 1 minute.

Add diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Simmer for 10–12 minutes until slightly thickened. Blend the sauce if you prefer a smoother texture.

Step 2: Warm the Beans

Heat the refried beans in a small saucepan over low heat until warmed through.

Step 3: Crisp the Tortillas

Heat vegetable oil in a skillet over medium heat. Lightly fry each tortilla for about 30–60 seconds per side until slightly crispy but still flexible. Transfer to a paper towel-lined plate.

Step 4: Cook the Eggs

Cook the eggs to your preference. Sunny-side-up eggs are the classic choice for Huevos Rancheros.

Step 5: Assemble

Spread warm refried beans over each tortilla. Top with an egg and spoon generous amounts of ranchero sauce over the top.

Add sliced avocado, crumbled cheese, fresh cilantro, and a squeeze of lime juice.
