  • 4 large flour tortillas
  • 6 large eggs
  • 2 tablespoons milk (30 ml)
  • 1 tablespoon butter (14 g)
  • 1 cup breakfast sausage, cooked (150 g)
  • 2 cups diced potatoes (300 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese (100 g)

Instructions

Step 1: Cook the Potatoes

Heat olive oil in a skillet over medium heat. Add diced potatoes, paprika, garlic powder, salt, and pepper. Cook for 10–12 minutes, stirring occasionally, until golden and crispy.

Step 2: Cook the Sausage

In another skillet, cook the breakfast sausage over medium heat until browned and fully cooked. Drain excess grease if needed.

Step 3: Scramble the Eggs

Whisk eggs with milk. Melt butter in a nonstick pan over low-medium heat and cook the eggs gently until soft and fluffy.

Step 4: Assemble the Burritos

Warm the tortillas slightly so they’re flexible. Add potatoes, sausage, scrambled eggs, and shredded cheese to the center of each tortilla.

Step 5: Wrap and Toast
